Some see symptoms improving within a few days or weeks after going gluten-free. Others don't see improvements for several months. Normally, it is suggested a Celiac allow a year to pass for most symptoms to disappear completely. A few sufferers require a longer time. ]

A: [The answer is complicated, but in general the answer is no. There are some in the Celiac community who believe that as long as a food contains less than 20 parts per million, it is safe for a Celiac to consume. This view is not shared by all, and thus the issue remains controversial. However, when a person is first diagnosed, everyone agrees that he/she should be 100% gluten-free for at least the first year to allow proper healing to occur.]
